Keto Vanilla Buttercream

Makes 2 cups (16 servings) Calories per Serving 110 Carbs per Serving 14g Net Carbs per Serving 0.5g Prep Time 5 minutes Total Time 10 minutes

Instructions

  1. In a medium bowl, using an electric mixer, beat butter for 2 minutes, until it is lighter in color and fluffy. Add cream cheese (or mascarpone), and beat for one more minute until mixture is completely smooth.
  2. Pour in the extracts and heavy whipping cream, and beat only for 10 seconds. 
  3. Scrape down sides of the bowl, and using a rubber spatula, fold in half of the the sweetener gently until it is smoothly incorporated. Sprinkle in the other half, and fold gently. 
  4. Use on cupcakes, cakes, as a frosting on a cookie sandwich, or any Keto sweet confection you can think of!  

Notes

  • if unsalted butter is used, then 1/8 teaspoon of salt needs to be added
  • other uses:  cakes, cupcakes, as a dip for strawberries, in the middle of a Keto-cookie sandwich, as a frosting for cookies, etc.
