Keto Orange Cream Cookie Sandwiches

Instructions
To make the filling:
- In bowl of stand mixer fitted with whip attachment, beat cream cheese and butter on medium speed until smooth, about 3 minutes. Add KETO:SWEET Granulated Sweetener and orange zest and increase to high speed. Beat, scraping down sides as needed, until filling is light and fluffy, about 2 minutes. Cover with plastic wrap and refrigerate until ready to use.
To make the cookies:
- Preheat oven to 350°F and line two rimmed baking sheets with parchment paper. In a medium bowl whisk together almond flour, baking powder and salt. In a separate large bowl beat together butter and KETO:SWEET Granulated Sweetener until combined. Beat in orange extract, egg and food coloring until smooth, about 30 seconds. Add flour mixture and fold until just combined.
- Roll dough into balls about 1 tablespoon in size. Evenly space dough balls onto prepared baking sheet and press into ½-inch thick disks. Bake, rotating baking sheets halfway through, until edges of cookies are lightly browned, about 12-15 minutes. Let cool for 30 minutes before filling.
- Place ½ tablespoon of filling on one cookie and top with second cookie, pressing so filling reaches the edges.

- Cookies can be stored in an airtight container and refrigerated for up to 1 week.
