Instructions

  1. In a medium bowl, gently stir together first five ingredients. Pour into an ice-cream maker, and churn according to manufacturer’s directions (usually about 30 minutes).
  2. When ice cream is at soft-serve stage, stir in pecans and coconut flakes. Serve immediately, or freeze for up to 1 week.

Notes

  • If you do not have an ice-cream maker, simply freeze the mixture into ice-cube trays. When cubes are fully frozen, remove several and pulse in a large blender or food processor until a soft-serve consistency forms. This method works best when the cubes have thawed slightly. Stir in pecans and coconut after.
