Instructions
- In a medium bowl, stir together peanut butter, butter, and vanilla until all the ingredients are evenly combined (use a hand-held mixer if necessary). Stir in sweetener in two batches, making sure it is evenly combined as well. Dough should be soft and shiny.
- Separate dough into 36 pieces. Roll each piece into a ball and place on a parchment paper lined plate or baking rack. Place balls in freezer for 10 minutes.
- Meanwhile, melt chocolate chips and coconut oil together in a small bowl by microwaving for 1 – 2 minutes, and stirring every 30 seconds until completely melted. Stir together until chocolate is smooth and shiny.
- Remove peanut butter balls from the refrigerator, and then create buckeyes by putting a toothpick in the center of each, and then carefully rolling in melted chocolate around the bottom and sides to create a buckeye-look.
- Place each back on parchment paper and freeze another 10 minutes until chocolate is solid. Store Keto Buckeyes in a plastic container in the refrigerator. Enjoy!
Notes
- Crunchy peanut butter may be used instead of creamy.
- Keto Buckeyes will keep in an air-tight container in the refrigerator for one week.
